How to Use Leftover Mashed Potatoes

Don’t let leftover mashed potatoes go to waste this holiday season. Try mashed potato dumplings or sweet potato quesadillas for a fun new take on your leftovers!

Mix your leftover mash with flour, baking powder, egg whites, and Three Onion Rub. Roll out the dough and cut it into bite-sized pieces. Then pop the pieces into boiling water for about three minutes, or until they float. Brown with butter and top with your favorite toppings, like cheese and bacon! You could even try leftover mashed potato tacos!

If you have leftover sweet potatoes, spread them onto a tortilla and layer with toppings of your choice, like black beans, cheese, and Chipotle Rub. Cook until your tortillas are browned, the cheese is melted, and all the ingredients are warmed through.

    Sounds good. I will not make it. This recipe doesn’t give amounts of the ingredients to use. I don’t guess. That wastes food.

      Have you ever made Colcannon (Irish mashed potatoes) it is mashed potatoes with cooked cabbage or kale..AMAZING
      sometimes I just open A can of Saurkraut and mix it with the leftover mashed potatoes…so good

    I agree with Elana. I was excited to have something different to do with leftover mashed potatoes but since this isn’t actually a recipe I won’t attempt.

    Elana – Google is your friend – VERY simple to search for recipes… Perhaps the reason they did not post a recipe is that everyone will have differing amounts of leftovers. I was happy with the idea because I never thought of using mashed potato leftovers this way! I guess it technically IS gnocchi! Happy Holidays!

      That’s exactly what I thought about Heather…gnocchi! I had them for the first time in my life about 2 weeks ago and was so excited for this recommendation since I do indeed have leftover potatoes !

    Click the word TACOS and it brings you to the recipe, everyone! The sweet potato recipe is more of an eyeball recipe.
