Turn Leftovers Into Pizza [Video]

Leftovers in the fridge means you'll have an easy dinner win later in the week, but it's hard to get excited for the same thing twice. Our Culinary Content Manager, Sandy Wolner, says "Make it a pizza!". She shares three rightovers ideas that transform one night's leftovers into an easy pizza night that'll leave everyone around the dinner table smiling.

Leftover Veggie Pizza

Ingredients

1 pkg (13.8 oz. /391 g) refrigerated pizza dough

8 oz. (250 g) sharp cheddar cheese, grated

1½ cups (375 mL) leftover roasted veggies, such as Brussels sprouts, carrots, and red onions

½ lb. (250 g) fresh pizza dough (or your favorite pizza dough)

½ tsp (2 mL) Smoky Barbecue Rub

Directions
Top your pizza crust evenly with the cheese. Add the veggies and rub and bake at 425°F (220°C) for 1214 minutes.

Instead of traditional pizza dough and tomato sauce, try grilled naan and a quick peanut sauce to make this fun twist on pizza night.

Chop up leftover chicken and add grated carrot and cucumber and cilantro.

Thanksgiving Leftover Pizza

Ingredients

1 pkg (13.8 oz. /391 g) refrigerated pizza dough

1 cup (250 mL) leftover mashed potatoes 

1 cup (250 mL) grated mozzarella cheese 

1 cup (250 mL) leftover turkey, chopped 

½ cup (125 mL) roasted sweet potatoes 

¼ cup (60 mL) chunky cranberry sauce 

Chopped fresh rosemary (optional) 

Directions

  1. Preheat the oven to 400°F (200°C). Unroll the pizza dough onto the Rectangle Stone. Bake for 8 minutes. 
  2. Microwave the mashed potatoes and cheese for 1 minute or until cheese is melted. Spread the potato and cheese mixture over the crust. 
  3. Top the pizza with turkey and sweet potatoes. Finish with dollops of cranberry. Bake 12–14 minutes. 
  4. Remove the pizza from the oven and top it with rosemary. 

Sandy's Rightover Pizza Tips

  • Get creative with your crusts. While pizza dough is easy, you can try naan bread, pita, or even tortillas as a crust.

  • Skip the sauce altogether to let the other ingredients shine or replace the sauce with other leftover ingredients.

  • When using sauce, it should be thick enough that it’s easy to spread but doesn’t make your crust soggy.

  • Par-baking helps keep crusts from getting soggy, too.

    I just cooked up a pizza using left over meats and cheese. I had left over ham, sausage, bacon, grated Monterey cheese, and fresh pineapple bite sized pieces. Used a pizza sauce too 450 12-14 minutes. Yummy
