11 Easy One-Pot Meals on a Budget

You can’t go wrong with a one-pot meal. All it takes is just one dish, pan, or pot—and dinner’s done. One-pot meals let you spend less time in the kitchen cooking and cleaning up and more time with your family. Plus, they’re usually very affordable, about $2 per serving, and cook in about 30 minutes or less. Here are eleven delicious and cost-effective one-pot recipes.

1. Pressure Cooker One-Pot Oktoberfest

With a pressure cooker, you can sear the bratwurst and steam the vegetables quickly in one pot. Get the taste of Bavaria right at home.

2. Cauliflower Shepherd’s Pie

Instead of mashed potatoes, this recipe is topped with cauliflower puree made in the Deluxe Cooking Blender. Perfect when you’re in the mood for a meaty, comfort-food classic.

3. Hidden Veggie Marinara Pasta

The Deluxe Cooking Blender makes it easy to sneak carrots and zucchini into this family favorite. For a thicker sauce, drain the tomatoes before adding to the puree.

4. Flank Steak Tacos

Up your taco game by turning them into a sheet-pan meal. Baking steak over veggies lets the marinade drip onto the vegetables which adds great flavor without leaving vegetables soggy or sitting in extra liquid.

5. Pressure Cooker Chicken Parmesan Pasta

This recipe comes together quickly in a pressure cooker. After you get a quick sear on the chicken in the inner pot of the pressure cooker, you toss all of the ingredients together, including the uncooked pasta, hit a button, and wait for dinner to be done.

Put a modern spin on two classic dishes by combining them into one meal that’s packed with major flavor. This dish will be your new go-to weeknight dinner. It requires minimal prep work and comes together in just 20 minutes in a microwaveable pan.

8. Southwest Stuffed Sweet Potatoes

You can make this meal in under 30 minutes in the microwave with a piece of stoneware. The chipotle rub adds a kick of southwestern flavor while the chicken, black beans, and corn round out the filling. Top off the dish with a zesty homemade sauce made of Greek yogurt, chipotle rub, and fresh lime juice.
