1. Breakfast Sandwiches
This recipe comes from a consultant’s post on Instagram. We love how @jensjoysjourneys tested making quick, grab-n-go egg sandwiches and made so many eggs squares at once! Here’s her recipe:
Crack 1 egg in each well. Poke each yolk with a fork and season with salt and pepper. Then bake in preheated oven at 350º (180°C) for 13–15 minutes until set.
Then assemble with an English muffin, cooked bacon or breakfast sausage, and cheese. You can wrap them up in wax paper and keep them in the fridge for up to three days or freeze them for up to a month. To reheat them, remove the wax paper and wrap your sandwiches in a paper towel. Heat them for two minutes in microwave or until heated through.
LThis is another recipe inspired by a consultant that goes way beyond a brownie box mix hack. A blended sweet pecan butter goes into a fudge brownie mix. Once baked, the brownies get topped with ice cream and a homemade butterscotch sauce. Pro tip: Double the sauce recipe. It’s great on its own.
3. Mini Apple Pies
What’s better than homemade apple pie? Single-serving portions of homemade apple pie! When you make these mini pies in the Brownie Pan, everyone gets a right-size piece with the perfect crust-to-filling ratio.

4. 2-Ingredient Pumpkin Cakes
Talk about a quick and easy dessert! As the name might suggest, this Brownie Pan recipe is about as easy as it gets. You can whip it up quickly if company drops in, or when you’re in the mood for a sweet treat. You only need a box of spice cake mix and a can of pumpkin.

5. Mini Mummy Pizzas
How cute are these? They’re a fun Halloween snack when the kids are done trick-or-treating. And don’t feel like you have to reserve this recipe for October only; modify it with your favorite toppings for fun snacking any time of year.

6. Pumpkin Streusel Cheesecake Squares
If you avoid making cheesecake because you don’t like how time-consuming or finicky it is, this recipe makes it simple. It comes together in about 30 minutes from start to finish! To make things even easier—and more delicious—this cheesecake recipe uses pecan shortbread cookies as a base instead of a traditional crust. Say hello to your go-to treat for fall.

7. Sausage and Apple Herbed Stuffing
Prepare your favorite stuffing recipe and bake it in a Brownie Pan. This way, everyone gets a proper stuffing portion or two! Plus it cooks faster in the pan, and each serving ends up with a delicious crispy edge. Maybe it will become your favorite holiday side dish!

8. Mini Frittatas
Make a quick and easy breakfast recipe at the beginning of the week and take a portion to work every day. Try our three easy frittata recipes in the Brownie Pan. And, these frittatas are simple enough to have prepped and ready to bake when visitors come to town.

9. Mini Spinach Lasagna Squares
Keep portion size in mind by preparing your favorite food—like lasagna—in a Brownie Pan. This spinach lasagna recipe uses cheese ravioli instead of traditional lasagna noodles for quick and easy prep. And two squares make one portion, so make a pan of these and you have enough dinner for the whole family and then some.

10. Mini Cheeseburger Pies
The beauty of this burger recipe is that you do 90 percent of the assembly right in the Brownie Pan before baking—the “bun” and meat cook at the same time. Then, just add the veggie toppings and condiments before serving.

11. Fresh Blueberries & Cream Cakes
Who doesn’t love the ease of a semi-homemade dessert? Layers of pound cake, sweet cream cheese, warm blueberry compote, and crispy crumbles add up to one delicious recipe. Try making a batch or two for a brunch or party.

12. Flourless Oatmeal Bars
This protein- and fiber-packed treat gets lots of nutrients from processed chickpeas, which take the place of flour in this recipe. These are a healthy snack option, but the flavors work well for breakfast, too…kind of like a homemade soft granola bar!

13. Veggie Quesadilla Cups
Here’s a fresh take on a quesadilla recipe that works great as an appetizer or as a main dish. All the ingredients are held within a cute little cup—very convenient for the kids’ meals!

14. Orange Blossom Cakes
Moist cake plus tangy and sweet citrus glaze…is there a better combination? These single-serving desserts are a cake version of an orange dreamsicle.

15. Strawberry Blondies
Finely chopped strawberries and melted white chocolate in the cake batter give this treat a heavenly touch of fresh sweetness. These will be the hit of any wedding shower or brunch party. And, you can whip them up fast without a pile of mixing bowls and scrapers using an all-in-one batter mixer and dispenser. One pump of the dispenser on its largest setting will fill each brownie pan well for evenly baking.

16. Apple Cheddar Bacon Egg Muffins
These breakfast muffins are a versatile and easy go-to recipe when you’re making brunch for a crowd. No brunch plans? Make them on a Sunday afternoon and you’ll have sweet and savory breakfast muffins all week long.

17. 2-Ingredient Carrot Cake
All it takes to get to tasty carrot cake bites is a can of mandarin oranges. Who knew? Add them to a box of carrot cake mix and you have a quick treat for that last-minute get together. Top it with store-bought cream cheese frosting or make your own with the tips in this Brownie Pan recipe.

18. Naughty Brownies
This dessert is an indulgent combo of chocolate and peanut butter in the best possible way. It’s the fusion of three simple store-bought ingredients into a unique treat that will disappear immediately from any dessert table.

19. Strawberry Heart Brownies
Individually baked brownies can be your little canvases for creative decorating. Pipe a couple’s monogram onto each brownie square for a bridal shower. Or add green and red mini candies for the holidays. Or pipe on a simple message of love to show you care any time of year.

Yum!
I make meat loaf individual servings, awesome.
Hi Wanda, How long do you cook the meat loaf ?
HI was wondering how long to cook also? do you fill each square a little more than half?
I fill it to the top and bake 24-26 minutes. I make turkey meatloaf with lots of ground veggies so sometimes it takes a little longer because of the moisture
Are the recipes included? Everything looks so good!
I know several of these can be found on the Pampered Chef website.
Click on the recipe name and that will take you to the recipe
I also make serving size meatloafs… making a whole meatloaf takes me about an hour to an hour and 15 to cook… in the brownie pan takes about 25 to 30 minutes
How many lbs of Hamburg do you use please?
You can use 1 lb or more, depends on your muffin pan size and if you want to make two pans or more. I use 1 lb of Hamburger, and I make 10 to 12 depending on the ingredients I add. (Like veggies)
I freeze them and then thaw them mid-week. I love to have them available on a busy night.

I cook my meatloaf in the brownie pan and also cornbread muffins.
I use mine for meatloaf all the time. Individual portions and faster baking time.
Please share your meatloaf recipe for the brownie pan. Thanks!
Jackie ~ I have a Quick mini-meatloaf recipe from a diet that I’ve been on, that should also work for this pan, tho I don’t have the pan and am not sure how big the wells are, compared to a muffin tin.
1 lb lean ground meat (beef / Buffalo ), Finely chopped onion, Salt, Pepper, Garlic powder, / any other spices of your choice, to taste. Mix all ingredients well, divide into equal portions, roll each portion into a ball – this uses a muffin tin instead of the brownie pan. Bake at 350(F) for approx 20 minutes.
Lynda. Thank you.I’m going to try the recipe using a mixture of lean ground beef/turkey. I’m on a low calorie diet and this will help for variety and portion control.
It is also great to make meatloaf sliders. Just put your mini meatloaf on a roll.
Thanks for the ideas! I have the pan but just not motivated to bake lately…. These recipes got me a little excited!

Do you use the jumbo size cupcake liners? My brownies seem equivalent to 2 batter wise. My regular cupcake liners seem to small or will they expand?

I love doing mini banana bread loaves in mine.
I’m wanting to bake gingerbread in this from scratch to give as gifts for Christmas. How long should I bake them? I figure fill them like you would the brownies. Do I put it at lower temperature than the recipe requires?
Would you please post the recipe for the stuffing cups? The one the button takes you to uses the deep covered baker. (I’m sure it just adjusts the baking time, but…)Thanks!
Thanks for drawing that to our attention! To make the stuffing in the Brownie Pan, bake it, uncovered, at 350 degrees, for 15 minutes.
Makes me look good when I deliver an say I made them. Brownie with pecans ,drizzled warmed chocolate icing topped with M & M’s and sprinkles. They are yummy.

Can the pumpkin cakes be made ahead and frozen for a week or so?
do you have to grease/flour the pan prior to baking brownies or cakes, muffins ,etc? is it non stick??
Hi Kathleen, they ARE nonstick. The brownie pan, muffin pan and mini muffin pan are all heavy-duty steel material- oven safe to 450°F & heats quickly. Plus, these pans are durable and made to last.
The Nonstick coating ensures an even bake, easy release, and an effortless cleanup.
They are also safe to use in conventional & convection ovens, or u can place in refrigerator or freezer.
