Weeknight Rightovers: Featuring Your Pressure Cooker

We’re excited to share her rightovers idea for making dinner and brunch even better: delicious ramen that, with a few eggs, turns into an equally great frittata. We’d love to hear what you think about it!


Once back-to-school comes, things will get even busier in our household. Which means, leftovers will be very much a part of our weeknight dinner plans. Whether that’s making a double batch of food the night before or getting creative and making something completely different with whatever leftovers we have.

One of our favorite ‘rightovers’ is to make salmon one night and the next day use the leftovers to make a delicious salmon fried rice or salmon pasta with lemon and broccoli. Anything that saves a little time, but still provides a well-balanced and easy meal for the whole family.

Not to mention, leftovers make great next day lunches! I always try to save a little bit of whatever we are having for dinner to pack in my daughter's lunchbox. And a little for my toddler's at-home lunch too. That is actually my biggest lifesaver! When it comes to making something entirely new with whatever is left, creativity goes a long way and sometimes, you make the tastiest dishes that way. Like this ramen and next day ramen frittata! Perfect ‘rightover!’

On your first night, make chicken ramen. The ramen is great with all sorts of different toppings. Get creative!

Ramen Frittata

After you’ve made your ramen, use the leftovers for a delicious frittata the next night.

  1. To make the frittata, whisk the eggs and ¼ cup (60 mL) of water in a mixing bowl. Add the salt and pepper.
  2. Pour into a greased, pressure-cooker-safe vessel. Top with the ramen leftovers.
  3. Cover the Quick Cooker and cook on STEAM for 13 minutes. Let the steam release naturally for 10 minutes, then press the steam-release button to manually release any remaining pressure.

    Looks good. Of course I would leave the chicken out for me. But I would like to try it.
