Weekday mornings can be hectic. Between wrangling kids, organizing backpacks, packing lunches, and (gasp!) getting yourself ready too, breakfast becomes an afterthought. Don’t skip the most important meal of the day! These healthy breakfast recipes are quick to prepare and easy to eat while you’re running out the door and on the go.
1. Egg White & Spinach Wrap
Crunched for time, but don’t want to sacrifice a delicious breakfast? Make a breakfast wrap—that’s packed with flavor—in less than 2 minutes using a microwaveable sandwich maker. It’s easy to make because all the ingredients are cooked at once.

2. Strawberry Frozen Yogurt Bars
These bars might taste like dessert, but they’re actually filled with fresh, healthy ingredients. They’re great for busy mornings when you don’t have time to sit down and have a meal. Make a batch and store them in the freezer for when you need a quick breakfast.

3. Microwave Omelet
This easy microwave omelet is a great way to use leftover veggies from last night’s dinner. Throw some eggs, cheese, and your favorite cooked veggies into the Ceramic Egg Cooker, pop it in the microwave, and a minute later your omelet is ready to head out the door with you. (Bonus—the cooker doubles as a to-go dish!)

4. No-Bake Quinoa Bites
Skip the sugar-loaded, unsatisfying granola bar and opt for something homemade and just as easy. Keep these make-ahead, no-bake energy bites in the fridge or freezer and grab a few to-go—three make for an ideal protein-packed breakfast. Pair them with fruit and a beverage and you’re set.

5. Breakfast Taco Roll-Ups
These taco roll-ups are way better than any breakfast burrito you get at a drive-thru. Filled with a healthy combination of eggs, chicken sausage, and reduced-fat cheese (plus mix-ins of your choice), they keep you full and keep the calories at-bay. Make a bunch and store in an airtight container in the freezer so they’re ready when you are.

6. Apple Cheddar Bacon Egg Muffins
These make-ahead egg muffins are the perfect combination of sweet and savory, complete with fresh apples and an unexpected French toast flavor (believe us, you’ll love it!). Whip up a batch in the Brownie Pan and you have the perfect portable meal for the whole family.

7. Chocolate-Almond Overnight Oats
There’s a reason overnight oats are so popular—they’re the ultimate fuss-free, healthy breakfast for busy people. Opt for a chocolate-almond version, which features the tasty combination of cocoa powder and almond milk. And fruit-lovers will crave this strawberry-flax seed recipe. In the mood for something warm? Try overnight oatmeal made in a slow cooker.

8. Pressure Cooker Egg Cups
Pressure cooking retains more nutrients compared to other cooking methods because it uses higher heat and shorter cook times. It’s also a great way to cook perfectly light, fluffy eggs. With this pressure cooker recipe, you can make breakfast for the whole week in less than 30 minutes. And you’ll save even more time if you use leftover vegetables like bell peppers or onions, or precooked meat like bacon or ham.

9. Blueberry Lemon Mug Muffin
Muffins from the microwave? Yes! This tasty mug muffin comes together in just a few minutes. Combine an egg, butter, milk, vanilla, flour, sugar, baking powder, blueberries, and lemon zest in the Ceramic Egg Cooker, and into the microwave it goes. Take the cooker with you and enjoy the sweet start to your day.

10. Quick Stovetop Granola
Start with homemade granola, a genius breakfast essential that stores for a week in an airtight container. Each morning, serve some over Greek yogurt in your favorite to-go cup for a simple and delicious breakfast that’s easy to transport. Add fresh seasonal fruit for an extra-flavorful punch.

I have yet too try anything but scrambled eggs in my Ceramic Egg Cooker, and I really need to try the muffins out.
My husband loves his oatmeal in it. We also have some dessert recipes that work in the ceramic egg cooker.
These recipes look great. Thanks
These quinoa balls look like something we need to try! Gluten free breakfast grab and go is really hard to come by.
Looks yummy!
Great post!
I’m actually a big fan of omelettes so I’m particularly keen to try the first one on this list. The problem is, I don’t yet have a ceramic egg cooker 😀
Actually, another really great read on this topic is an article I found recently on Health Ambition, here: https://goo.gl/TH5eK2
I haven’t tried them all, but I’d say particularly #18—the granola parfait—is an absolute winner for a quick morning snack.
Anyway, keep up the good work!

I make a big batch of steel cut oatmeal and freeze portions in the brownie pan. 80 seconds in the microwave, add local honey, slivered almonds and dried cranberries; then I’m good to go until lunch.
Can you boil an egg in the ceramic egg cooker?
