Tips & Tricks
- Polenta can be found at most grocery stores in the Italian food section and typically comes in a tube (like pork sausage).
- To make polenta fries, spread a thin layer of cooked polenta on a greased baking sheet (or a baking sheet lined with parchment paper). Then, let the polenta set and firm up before you cut it into fries. You can speed this process up by popping your baking sheet into a freezer for a couple minutes.
- Try to cut the polenta into fries as evenly as possible so they’ll all crisp up nice and consistently.
- If you prefer thinner fries, you can cut them smaller, but they will dehydrate quicker, which will give them a much crunchier texture.
