Behind the Spring/Summer 2022 Season’s Best Recipes

This year, we added so many amazing recipes to Season’s Best® that we don’t even know where to start. Here are a few of our favorites, which you can make with fresh, seasonal ingredients and some of our products. They range from juicy stuffed burgers to picture-perfect cheesecake.

Cacio e Pepe With Zucchini & Peas is a fantastic dish your whole family will love―kids included! It features pasta coated in freshly grated cheese and cracked black pepper slathered in butter. And, to make sure everyone’s getting a good serving of veggies, it also has frozen peas and grated zucchini that’s nearly invisible when mixed in with the pasta. Plus, as you cook the zucchini, it releases moisture that makes the sauce so much creamier.

Tips & Tricks

  • Remember to add salt to your pasta water! Just 1 tbsp (15 mL) of salt should do and it’ll make quite a difference to the taste and texture of your pasta.
  • After your pasta has cooked, save some of the excess salt water to add to your sauce. Since it’s infused with the pasta starch, it’ll make your sauce creamier.
  • Finish this dish with a little lemon zest to add spring brightness to it.

Made from boiled ground-up cornmeal, this ingredient can be used for anything from pasta to fries. Yes, fries! Our Polenta Fries With Creamy Pesto have an interesting texture that’s both creamy and crunchy. And when you serve it with creamy tomato pesto, you and your friends will be blown away by the taste.

  • The crispy, crunchy texture of the fries and the creaminess of the pesto sauce make this appetizer a perfect match!
  • Polenta fries make an amazing base for loaded fries.

Tips & Tricks

  • Polenta can be found at most grocery stores in the Italian food section and typically comes in a tube (like pork sausage).
  • To make polenta fries, spread a thin layer of cooked polenta on a greased baking sheet (or a baking sheet lined with parchment paper). Then, let the polenta set and firm up before you cut it into fries. You can speed this process up by popping your baking sheet into a freezer for a couple minutes.
  • Try to cut the polenta into fries as evenly as possible so they’ll all crisp up nice and consistently.
  • If you prefer thinner fries, you can cut them smaller, but they will dehydrate quicker, which will give them a much crunchier texture.
  • Toss the fries with Garlic & Herb Rub after you air fry them so the seasoning doesn’t burn as they cook.
  • After the fries cool, they’ll be even crunchier, so adjust your cook time if you prefer softer fries.
  • You can kick things up a notch by adding taco seasoning, a spicy Asian seasoning, or your own blend of spices to the finished fries.
  • Try out different flavor combos with your fries by serving them nacho cheese, garlic aioli, ranch dressing, or homemade hummus.

  • For a slightly richer flavor, replace the lemon juice with 1 tbsp (15 mL) of balsamic vinegar or balsamic glaze.
  • Make the whipped mozzarella on its own! Spread it on bagels or toast, add it to different types of pasta, or use it to top off sauteed veggies.
  • If tomatoes aren’t in season, you can always swap them for squash, onions, bell peppers, or even mushrooms.

    I purchased a quick cooker a little less than a year ago. It seems to be very familiar to the multi-cooker. Can I cook suis vide in it?

      Hi there! No, the multi-cooker is the only pressure cooker that can do the sous-vide. 🙂

    Hi, the reply to Puanani White’s question about suis-vide in other quick cookers by Samantha Boley is very misleading. There are other multi-cooker products that cook suis-vide. I have a non-PC multi-cooker that does offer suis-vide before PC introduced their multi-cooker. Mine does not have a suis-vide button but does have a low pressure option along with recipes. I love PC products. Thank-you for delicious recipes.
